What makes this zucchini carrot salad so nutritious?

Zucchini- other than being tasty and versatile they also have a lot of health benefits. They are rich in vitamins A and C, Manganese, Potassium, Magnesium, and many more. Zucchinis are also a great choice for everyone looking to lose weight. They contain a lot of water which makes you feel fuller and eat less, and are very low in calories. In addition to all these benefits, they are also rich in fiber and antioxidants.

Carrots- another vegetable you should definitely incorporate in your diet is carrots. Carrots are also a very diet-friendly vegetable that brings a lot of benefits to the table. Some of them being high levels of vitamin A, B6, and B7 (Biotin). Also, when eaten raw (like in this zucchini carrot salad) they have a low GI (glycemic index). Low GI means that carrots don´t spike your blood sugar which results in fewer cravings which can help with weight control.

Feta cheese- this delicious type of cheese originates from Greece and although you should consume it with measure because of its fat content, it comes with a lot of health benefits. It is rich in Calcium, Phosphorus, and vitamins B2, B6, and B12. It also contains friendly bacteria that support your gut health and have anti-inflammatory benefits for your body.

Olive oil- well I think no explanation is needed here. Olive oil is a well-known and highly celebrated elixir of health. The reasons for that are almost too many to count. It is rich in healthy monounsaturated fats, contains a high amount of antioxidants, has strong anti-inflammatory properties and the list goes on…

Thyme- this delicious herb is mostly used in Mediterranean cuisine. It is famous for its many health benefits, some of which are its antiviral, antibacterial, antifungal, and antiseptic activities.

Balsamic glaze- balsamic glaze is a thick liquid made of balsamic vinegar and sweetener such as honey, brown sugar, or fruit puree that has been boiled down to achieve its thick consistency. Some researches indicate that it can help improve your immune system, promote gut health, improve blood circulation, and regulate blood sugar.

Ingredients
  • 2 zucchinis
  • 3 carrots
  • 100 grams Feta cheese
  • salt (up to taste)
  • 3 tablespoons olive oil (or up to taste)
  • 3 tablespoons balsamic glaze (or up to taste)
  • 1 teaspoon Thyme
Instructions
    • Cut zucchinis into small cubes and roast them in a pan with a little bit of olive oil. This process is very short. Just until they get some darker spots and that yummy "grilled" flavor. When they´re done, let them cool down to room temperature
    • In the meantime grate the carrots. If you have different hole sizes on your grater, opt for the bigger one.
    • Now combine carrots and zucchinis, and crumble Feta cheese on it.
    • Add olive oil, salt (be careful because Feta cheese is salty), balsamic glaze, and thyme and give it a good stir. And voila!
    • It´s done already :)
