What you´ll need for this creamy mushroom soup?
Mushrooms– ok, I think that part is clear. For creamy mushroom soup, you will obviously need mushrooms 🙂 . I usually make this with button mushrooms or cremini mushrooms, as they are very similar to each other. It really doesn´t matter which ones you choose for this recipe, as it doesn´t change much in the flavor, although cremini mushrooms do add a bit more flavor to this soup. These mushrooms are a great way to incorporate a lot of flavor into your diet, with adding very few calories. And that intense flavor is exactly the reason why you won´t have to add a bunch of other ingredients to this soup. Here we´ll stick to the “less is more” rule. No fancy spices needed here. Salt and pepper will do the trick!
Onion-if you ask me, there is no good dish without onions. For this particular dish, one medium-sized onion will be enough. The key is to saute the onion in some oil until it gets soft and caramelized before adding the mushrooms
Heavy cream– heavy cream is a must if you want to achieve nice and creamy soup. If you want to reduce the fat content, you can substitute the heavy cream for milk but I have to say it will result in a not-so-creamy soup. Other substitutions I haven´t tried. I assume plant-based cream would also work (for making this recipe vegan) but I can´t say for sure as I´ve never tried it.
Other than that you will need some oil for greasing the pan, salt, pepper and some water.
Hand blender– You will need a blender to puree this soup. I used a hand blender because I found it to be the easiest and quickest solution. That being said, you can also use a food processor or a blender. I pureed my soup to a pretty smooth consistency but you can also leave it chunky if that´s what you prefer.
Spice things up with toppings
This mushroom soup is absolutely delicious on its own, but you can always spice things up with some toppings. Read below for some delicious topping ideas.
- sour cream– adds a refreshing tangy flavor that complements the intense flavor of this creamy mushroom soup very well.
- croutons-add extra crunch. Creamy and crunchy are a match made in heaven!
- parsley-adds fresh and herby aroma to this dish. It is also very decorative!
- fried bacon-do I really have to say anything except “Yuuum” about fried bacon?
- grated cheese– you can add some grated Parmesan cheese or a plain Gouda. Whatever you prefer.
- caramelized onions-cut onion into strips and saute it with some oil on low heat until it gets soft, brown, and sticky. You can also add some brown sugar in the process.
Can I use some other kind of mushrooms?
So far I´ve prepared this soup with porcini mushrooms and with cremini/white button mushroom. The combination of the two also results in a wonderful flavor explosion. As for the other kinds of mushrooms, I don´t see why this recipe wouldn´t work great. But as I´ve said, I haven´t tried it myself.
What should I use for thickening the soup?
That´s the best thing about this creamy mushroom soup. It doesn´t call for any flour or starch to thicken it, as many other recipes do. You will achieve the right consistency just by regulating the water amount and pureeing the mushrooms.

Let´s start:
- saute the onions with some oil on low heat until they get soft and golden. At this point add the pre-chopped mushrooms to the pan and saute until they release the water (salting them at this stage helps them release the water faster).
- Once they release the water, add 750 ml water to it before they start sticking to the pan.
- Cook for cca 15 minutes.
- Blend the mixture using a hand blender to the desired consistency. I went for smooth without any pieces.
- Add heavy cream and cook for an additional 2 minutes. Don´t forget to season it with (additional) salt and pepper.
- Voila! Your soup is done already! Now add some toppings and enjoy :)
