Yes, this recipe is gluten-free. However, if you are gluten intolerant, you should definitely make sure you use certified gluten-free oats.
What can I use instead of carrots?
My favorite substitute for carrots in this recipe is zucchini. But keep in mind that zucchini contains more water, so you will have to grate it, put some salt on it, and leave it for a couple of minutes to let the water out. After that, you will have to squeeze all the extra liquid out and mix it with the rest of the ingredients.
How should I serve this Cottage Cheese Carrot Slice?
Well, that´s the best thing about this recipe. You can eat it hot,cold, for breakfast, lunch, or dinner, as a main dish or as a side dish…the possibilities are endless. But my favorite way of eating this is having a warm slice of it topped with a scoop of sour cream and a salad on the side. Try it :)
Simply combine all the ingredients together. Press it into a lightly greased pan, put some seeds on top (optional) and sprinkle with some Parmesan cheese. Put into a preheated oven and bake at 200 C until golden.
