This recipe is for all the pancake lovers out there, that are trying to eat healthier and smarter. And these pancakes are not a flavorless healthy alternative, that has nothing to do with the original anymore. No, these healthy apple pancakes are light, soft, fluffy and delicious. What spices things up a bit is a subtle apple flavor that goes perfectly with a pinch of cinnamon for cold winter mornings or some lemon zest for sunny summer picnics.

What Can I Eat These Healthy Apple Pancakes With?

Well, as with normal pancakes the possibilities are endless. My favorite is, however, the classic- Maple syrup. Maple syrup not only enhances that classic pancake feeling but also ensures that this breakfast/dessert stays sugar-free. Next to maple syrup, I like adding some applesauce and sliced apples to enhance the apple flavor. But if that´s not your thing, feel free to try something else. Some honey, berries, greek yogurt, or melted dark chocolate fit great with this recipe as well.

What Makes These Pancakes so Heathy?

Oat flour– instead of classic all-purpose flour, in this recipe we are using something much better- oat flour. Oat flour basically means ground oats. That means that oat flour has all the nutritional values of oats, but it ensures a lighter and smoother consistency of these pancakes. If you have a blender at home, there is no need to buy oat flour. Just grind your oats in the blender until you achieve a flour-like consistency and that´s it. Fast, easy, and definitely cheaper than buying already prepared oat flour. Oats are high in protein and fiber and contain many vitamins and minerals, including magnesium, iron, zinc, selenium, and vitamin B1. This makes oats a great add-in to your breakfast routine, or diet in general. And what better way to incorporate oats into your diet than with these delicious healthy apple pancakes?

Apples– Apples are a great source of fiber and vitamin C. They also contain antioxidants and many other vitamins and minerals that make this everyday fruit a real little nutritious bomb. For this recipe, you will need just one apple. And before you say one apple is not enough to call these pancakes apple pancakes, I will say that you are right. The rest of the apple flavor in these pancakes comes from a secret ingredient- applesauce! (well now it´s not a secret anymore)

Applesauce– you can either buy or make your own applesauce. For this recipe, I used a store-bought applesauce. Just make sure to buy sugar-free applesauce, because some companies add sugar into it.

Eggs-eggs also contribute a lot in making this recipe super nutritious. They are high in protein, contain healthy fats and high amounts of vitamins A, B2, and B12, calcium, selenium, and many more. For this recipe, you will need 3 medium-sized eggs.

For cca 20 small pancakes:

Instructions

    1. If you don´t have oat flour, start by processing your oats in a blender until you achieve a flour-like consistency.
    2. Using a hand mixer beat all the ingredients together until well incorporated. And just like that, your healthy apple pancake batter is ready already.
    3. Heat the pan with some coconut oil (you can use some other oil if you like), but keep it on low heat. This is very important. If the heat is too high, your pancakes will get burned from the outside before they cook thoroughly on the inside.
    4. Form pancakes (5-6 cm in diameter) in the pan and cook from both sides until golden. Don´t forget to add extra oil in between the batches (very little oil is sufficient).
    5. Serve with a topping of your choice. I prefer them with maple syrup and applesauce.
